Wow - this is actually a cookbook you read!! Every chapter! It teaches the why's of cooking not just the how's. There are a lot of cooking "rules" that it turns out aren't true, and others that are. To tell you how much I love this book - after I returned the copy to the library (ran out of renewals) I actually bought a copy to keep at home. (my husband was astounded that was a book with more information than I can absorb in a month)
